Wash the quinoa several times, rubbing it in your hands and letting it go to the bottom of the pot before changing the water, until the water is clear.Drain the quinoa in a fine strainer.
Heat oil in a pot and add the onion. Then add the pepper and let it cook for a few minutes. Add the ground peanuts, condiments, cubes and finally the quinoa. Let cook, add the potatoes and wait for them to cook (do not undo).
Once cooked add fresh cheese, milk and mix.
Serve and garnish with chopped parsley and chopped egg.
It can be served with Ají sauce.
