Wash the quinoa several times until the water comes out clear and clean. Drain and add in a pot with boiling water. Stir with a wooden spoon and let cook for 12 to 15 minutes or until smooth. Strain and spread the cooked quinoa on a baking sheet to cool it.
Mix the cooked beans with the balsamic vinegar, 1 teaspoon salt and pepper to taste.
Mix quinoa with beans, bell pepper, coriander, corn, celery, garlic, Chinese onion, and chili. Seasoning is salt, pepper, lemon juice, cumin, olive oil.Let it rest while preparing the tomatoes.
Cut the top of the tomatoes horizontally. With a spoon carefully empty the inside of the tomatoes.
Sprinkle with salt and place inverted in a grid to remove excess liquid for 15 minutes.
Stuff with quinoa salad and beans. Place the tomatoes on a base of the salad. Garnish with lettuce leaves
To serve.
